Simple Salmon Tacos

Wow these Simple Salmon Tacos are amazing! The spicy salmon with the fresh salsa and garlic mayonnaise is so delicious. My husband who doesn’t usually like salmon was so impressed he asked for more, so this was definitely a win and something I will continue to make. One of the great things about this dish for me was it took under 30 minutes to make something so tasty!

INGREDIENTS

For the Salsa:

15 Cherry Tomatoes

1/2 a Red Onion

1 Teaspoon Minced Garlic

Juice of 1/2 a Lime

For the Salmon:

2 Fillets Boneless Salmon

1 Teaspoon Paprika

1 Teaspoon Cumin

1 Teaspoon Cayenne Pepper

1 Teaspoon Garlic Salt

1 Teaspoon Onion Salt

For the Tacos:

6 Small Flour Tortillas

A Handful of Fresh Spinach

Garlic Mayonnaise

METHOD

To start I make the salsa, to do so dice the cherry tomatoes and finely dice half a red onion.

Place into a bowl with a teaspoon of minced garlic and squeeze over the juice of half a lime.

Mix everything together and put to the side.

Pour some oil into a large frying pan and put over a low to medium heat to warm up.

Place the paprika, cumin, cayenne pepper, garlic salt and onion salt on a small plate.

Mix together, then dip the salmon fillets flesh side down in the plate to coat with seasoning.

When the oil has warmed in the pan place the salmon fillets flesh side down into the oil.

Leave to sear for a few minutes before moving them on to each side to sear. Then turn them skin side down to finish cooking through. It will likely take around 5 to 10 minutes for the salmon fillet to cook through, you can tell they’re done when they starts to flake with the spatula and is lighter pink inside.

Take the salmon out of the frying pan and flake the flesh off the skin on a small plate.

Heat a small frying pan up, toast the tortillas for a few seconds each side.

Slice up the spinach and add to the centre of each tortilla.

Layer over some of the flaked salmon, then a couple teaspoons of salsa and a squeeze of garlic mayonnaise.
