Roast Vegetable Wrap Pizza

Today I thought I’d share one of my go to easy mid-week meals. These Roast Vegetable Wrap Pizzas can be made in under 30 minutes and feel like the perfect treat for a tuesday night. The wholemeal wrap base, topped with cheese and roast vegetables is comforting and feels indulgent after a busy day.

Serves 2

INGREDIENTS

2 Wholemeal Wraps

Tomato Puree

1/2 a Courgette

1/2 a Red Pepper

1/2 a Brown Onion

2 Handfuls of Grated Cheese (I use Lactofree Mature Cheddar or Violife Mozzarella Flavoured Grated)

A Large Pinch of Salt and Pepper

METHOD

Preheat your oven to 200°C.

Thinly slice half a courgette, red pepper and onion. Place onto a baking tray, cover with some olive oil and a pinch of salt and pepper.

Put the vegetables in the oven for approximately 15 to 20 minutes to soften.

Place your wraps on two baking trays, spread approximately a tablespoon of tomato puree on each wrap.

Sprinkle a handful of your grated cheese on each wrap.

Take the vegetables out of the oven and split between the two wraps.

Place the wrap pizzas in the oven for approximately 10 minutes.
