Pesto Pearl Gnocchi

When life hands you Pearl Gnocchi, make Pesto Pearl Gnocchi with lots of green vegetables.

I really fancied gnocchi this week and could only find Tricolour Pearl Gnocchi in our local shop so decided to give it a go. It looks so cute and with mixed with pesto and green vegetables in this recipe it tastes amazing.

INGREDIENTS

1 Packet Pearl Gnocchi

1 Vegetable Stock Cube

1 Brown Onion

1 Courgette

Handful of Asparagus

Handful of Spinach

1/2 Teaspoon Nutmeg

Butter

2 Tablespoons Pesto

Small Handful Fresh Basil

Small Handful Fresh Parsley

METHOD

Heat a pan of water until it forms a rolling boil. Add your stock cube and gnocchi, leave to simmer until the gnocchi rises to the top.

Dice the onions, courgette, asparagus and spinach.

Add the onions, courgette, asparagus to a large frying pan on a medium heat with some oil and half a teaspoon of nutmeg.

Fry until they soften, add the spinach, mix until wilted, take out the pan and set aside in a bowl.

Drain the Gnocchi, add to the frying pan with a tablespoon of butter. Stir every so often but leave the Gnocchi to brown slightly.

Add two tablespoons of pesto to the Gnocchi and stir in.

Once the Gnocchi is coated in pesto, add the softened vegetables back to the pan. Mix everything together.

Roughly chop a handful of basil and fresh parsley. Add to the pan.

Grate over a small chunk of parmesan cheese and mix everything together.

Serve hot with some more grated parmesan cheese.
