Gluten Free Cherry and Almond Cake

There are trays of cherries in our local stores which I couldn’t resist picking up. After bringing then home and wondering what to make I decided to adapt one of my favourite cake recipes to make this Gluten Free Cherry and Almond Cake. It turned out so well I thought I better share it!

INGREDIENTS

1 Egg

140g Gluten Free Self Raising Flour

140g Butter

140g Ground Almond

320g Golden Caster Sugar

400g Cherries

METHOD

Preheat the oven to 150°C.

Pit the cherries, add them to a pan with 80g of golden caster sugar.

Put the pan on a medium heat and let the cherries soften.

Once softened and the sugar has dissolved pour the contents of the pan into a blender.

Blend for a few seconds so there are still chunks of cherries and put the mixture to the side.

In a large mixing bowl add the flour, almond, the remaining sugar, egg and butter. Mix everything together, it should combine to have a grainy texture.

Grease the cake pan (I've used a loaf tin this time), add approximately 2/3rd of the cake mixture to the bottom of the pan.

Spoon the cherry mixture on top of the cake mixture in the pan.

Then pour over the rest of the mixture.

Put into the oven for approximately 35 to 40 minutes.

Leave to cool slightly before transferring the cake out of the tin and enjoy.
