Dark Chocolate Lotus Biscuit Puffs

My husband and I love the taste of Lotus Biscuits, so when we found Lotus Biscuit Spread in our local store last year it was a no brainer buying it. Ever since we’ve played around using it in different ways and I think I have found one of my favourite ways with these Dark Chocolate Lotus Biscuit Puffs. The bitterness of the dark chocolate, creamy sweetness of the Lotus Biscuit Spread, salty taste of the butter are all wrapped up in the flaky puff pastry. They are light and decadent.

INGREDIENTS

2 Packets Ready Rolled Puff Pastry

250g Dark Chocolate

6 Tablespoons Lotus Buiscuit Spread

50g Salted Butter

3 Lotus Biscuits

METHOD

Preheat your oven to 180°C.

Roll out your sheets of puff pastry and cut each sheet into 6 equal parts.

Spread approximately half a tablespoon of Lotus Biscuit Spread in the centre if the puff pastry.

Chop your dark chocolate into 12 pieces and place on top of the spread.

Melt some butter and spread it across the un covered pastry.

Fold the top and bottom edges of pastry over the chocolate and Lotus Biscuit spread then roll the remaining pastry over like wrapping a present.

Turn the puffs over so the seams are on the base and place onto a pre lined baking sheet.

Coat with some more melted butter.

Place several Lotus Biscuits in a plastic ziplock bag, seal the bag and crush the buiscuits with a spoon.

Sprinkle some crushed Lotus Biscuit over the puff.

Repeat until all the pastry is used up.

Place in the oven for approximately 20 minutes.

Leave cool slightly before serving and enjoy!
