Baked Vegetable Gnocchi

If you are looking for an easy mid week meal look no further than this one pan Baked Vegetable Gnocchi.

Simple, satisfying and best of all a one pan dish so little to clean up afterwards.

INGREDIENTS

2 Red Onions

1 Courgette

1 Yellow Pepper

1 Packet Gnocchi

1 Jar Tomato Sauce

Cheddar Cheese (I use Lactofree Mature Cheddar)

METHOD

Preheat to the oven to 200°C.

Dice the vegetables, add to a baking dish.

Add the packet of Gnocchi and jar of tomato sauce to the baking dish.

Mix everything together so the gnocchi and vegetables are well coated in tomato sauce.

Top with grated cheese and put in the oven for 35 minutes.

Serve hot.
