Alternative Baked Potatoes

Have potatoes in your kitchen that you don’t know what to do with? Why not try these Alternative Baked Potatoes?

This recipe can be adapted to use whatever you gave to hand. Don't want tuna, take it out, add leftover meat or keep it Vegetarian if you want. The possibilities are endless.

Serves 4

INGREDIENTS

3 Medium White Potatoes

1 Courgette

1/4 Head Broccoli

3 Red Onions

1 Red or Yellow Pepper

1 Tin Tuna

1 Tablespoon Garlic Granules

1 Tablespoon Smoked Paprika

2 Large Pinches of Salt

Cheese to grate.

METHOD

Preheat the oven to 200°C.

Roughly dice the vegetables, put into medium baking tray.

Drizzle over some oil to coat the ingredients in the tray (I used vegetable oil). Add your herbs and salt. Toss everything together.

Put in the oven for approximately 40 minutes, tossing halfway through.

Take out, add a drained can of tuna and grate over your cheese of choice. Put it back in the oven for approximately 20 minutes for the cheese to bubble and brown slightly.

Serve hot.
