Cosy Cottage Pie

I thought I'd start the week by sharing one of my favourite comfort meals, this Cosy Cottage Pie. Rich beef sauce topped with cheesey mash potatoes makes this dish is a great crowd pleaser!

INGREDIENTS

1kg Minced Beef

5 Onions

200g Frozen Peas

5 Potatoes

1 Tablespoon Garlic Granules

1 Tablespoon Mixed Herbs

1 Tablespoon Thyme

1 Tablespoon Tomato Paste

2 Beef Stock Cubes

100g Grated Cheese (I’ve used a mix of Violife Hrated and Lactofree Mature Cheddar)

METHOD

Preheat the oven to 180°C.

Peel and dice the potatoes and add to a large pan of salted water. Put over a medium heat and cook until soft.

Peel and finely dice the onions add them to a large pan with a large slosh of rapeseed oil. Place over a medium heat and cook until softened.

Add the beef, herbsand tomato paste to the onions. Mix everything together and stir until the beef browns.

Add the beef stock cubes a pint of water and the frozen peas to the pan. Mix everything together and leave simmer for approximately 10 minutes.

Transfer the meat sauce to a casserole dish and put to the side.

Drain the potatoes and out back into the pan with the grated cheese and around 100ml of oil. Mash everything together.

Place the mash potatoes over the beef mixture and place the casserole dish in the oven for approximately 35 minutes.

Serve hot and enjoy!
